Corn Chowder


Ingredients in red can be purchased from our farm but are seasonal items

2 cups cubed potatoes

1/2 cup chopped onion

1/2 cup finely chopped celery

1 quart jar/bag corn or 2 cans store bought corn

1 12 ounce can evaporated milk

1/8 tsp cayenne pepper

1/4 tsp salt

3 slices fried bacon

Combine potatoes, onions and celery in a large saucepan.  Add enough water to cover vegetables.  SImmer for 20 minutes or until tender, drain.  Return vegetables to saucepan.  Partially mash the potatoes with a fork.  Add the corn to the mixture.  Bring mixture to a simmer.  Add evaporated milk and mix well.  Simmer for 5 minutes.  Add cayenne pepper and salt to mixture.  Ladle chowder into soup bowls and top with crumbled bacon.
