Fried Corn nuggets


All ingredients in red can be found seasonally at Heritage Meadows Farm

2 1/2 cups of corn

2 eggs separated

2Tbsp all purpose flour

1tsp sugar

1/2 tsp. salt

1/2 tsp. pepper

2 Tbsp. Veg. oil

Combine corn, lightly beaten egg yolks, flour, sugar, salt, and pepper in large bowl.  Beat egg whites with an electric mixer on high until stiff peaks form.  Stir egg whites into corn mixture.  Heat oil in large skillet.  Drop heaping tablespoonfuls of batter into skillet and cook until they are browned.  Roughly 3 minutes per side.
